
When most people hear the word histamine, they think of hay fever or allergic reactions. But histamine is much more than sneezing and itchy eyes — it’s a powerful compound your body produces daily, with key roles in digestion, immune response, nervous system function, and inflammation control.
The problem comes when your body can’t break histamine down effectively. That’s when histamine intolerance develops — and the symptoms can be surprisingly wide-ranging.

Histamine intolerance isn’t a true allergy. It happens when your histamine load — from food, stress, gut bacteria, and more — exceeds your body’s ability to break it down.
Your main defence is an enzyme called Diamine Oxidase (DAO), which breaks down histamine in the gut. When DAO levels are too low — due to genetics, gut inflammation, certain medications, or nutrient deficiencies — histamine builds up in the body, triggering symptoms.
Histamine intolerance can mimic other health issues and often goes undiagnosed. Symptoms may include:
Digestive issues: bloating, cramps, diarrhoea, nausea
Skin symptoms: itching, flushing, rashes, eczema, rosacea
Headaches or migraines
Fatigue or post-meal crashes
Irregular heartbeat or low blood pressure
Anxiety or panic attacks
Sleep disturbances
Motion sickness
Asthma-like symptoms or nasal congestion
Because symptoms can appear hours after eating, many people never suspect histamine as the cause.
Histamine is naturally present in many aged, fermented, or processed foods, such as:
Aged cheeses
Cured meats
Wine, beer, and champagne
Vinegar, soy sauce, miso
Sauerkraut and kimchi
Shellfish and canned fish
Leftovers (histamine levels rise over time)
Certain foods — including citrus fruits, chocolate, tomatoes, and strawberries — don’t contain histamine but can trigger its release in sensitive people.
Vitamin C is one of the few natural compounds shown to help lower histamine levels. Other nutrients that may support DAO activity include vitamin B6, copper, magnesium, and zinc.
Gut health plays a major role too. Damage to the gut lining or imbalanced gut bacteria can reduce DAO production, worsening histamine overload. Many people with histamine intolerance also experience IBS, food intolerances, or low stomach acid — all of which can make symptoms more complex.
